Adami - Bosco di Guca - Valdobbiadene Brut Prosecco
Overview: Made up of predominately Glera and trace amounts of Chardonnay, "Bosco di Gica" is the ancient name of the site of the family's first vineyard dating back to 1490. The vines grow 100-300 m above sea level, on steep, south-facing slopes with well-drained mixed soils made up of glacial origins. The region's moderate temperatures offer cold winters and warm, dry summers. Once harvested the fruit is lightly pressed with bladder presses followed by settling of the must. Fermentation occurs in temperature-controlled stainless steel tanks where the wine spends 3 months on its lees. Charmat method is used for the secondary fermentation in steel pressure tanks for approximately 40 days in order to preserve the aromas of the grape and develop the wine's typical fruitiness.
Tasting Notes: Finest shimmering golden yellow color. On the nose there is white peach, as well as yellow apple and lemongrass, with a touch of grapefruit. It is lively on the palate, with rich texture and minimal yeast notes. It is crisp and saline, with finesse and persistence, then a decidedly long finish.
Pairing: Spaghetti cacio e pepe
Points: 91, Vinous
Format / ABV: 750 ml / 11.0%
