Overview: Located in the South of France, in the North-East of the AOC Faugères, in the heart of LANGUEDOC, the Domaine Ollier-Taillefer is family-run. It is run by Luc and Françoise Ollier, brother and sister, 5th generation of winegrowers native to the cru and now responsible for these 36 hectares of vineyards in the AOC Faugères area, now converted to Organic Agriculture. Labeled as Les Collines until the 2018 vintage, this is hand-harvested, raised in tank, a wine that speaks transparently of schist and its dark depths; long, lithe, and deliciously Languedocien. Production averages 5,500 cases.
Tasting Notes: Young vines of Grenache, Syrah, Mourvèdre. Rosé from a fruity and slightly spicy terroir.
Pairing: As an aperitif with a few tapas, and with summer meals as an accompaniment to grilled meats, local charcuterie, tomato gazpacho.
