Scarbolo - Campo del Viotto - Merlot

Overview: This bottling of 100% hand-harvested Merlot comes from the single vineyard "Campo del Viotto". This wine is made only in select years with the finest fruit of the vintage. Fruit is hand-harvested in two separate harvests. The first whole clusters harvested (approximately 30%) are dried out for about 20 days, then de-stemmed and transferred to small open-top oak barrels for fermentation. The whole clusters from the second harvest are immediately de-stemmed and placed in small open-top oak barrels for fermentation. Frequent manual punchdowns of the cap allow for maximum color and tannin extraction. 80% of the wine is aged in large tonneaux and 20% in small oak barriques for 2 years. The juice is bottle-aged for an additional 6 months before release. 

Tasting Notes: Campo del Viotto Merlot is dark and alluring with a perfumed display of violets and lavender, giving way to sweet wood spice, ripe crushed blackberries and blueberries. It’s velvety in feel, finding balance through brisk acids and zesty red and black fruits. Grippy tannins collect upon the senses, yet there’s so much primary intensity here that they hardly get in the way, as notes of dark chocolate, tobacco and sour cherry resonate.
